Waffles for Tourettes @ Hobbs
Waffles for Tourettes is a collaborative effort between Marc Schmidt and Hobbs Coffee owner William Randall to bring delicious Liège sugar waffles and raise awareness for Tourette Syndrome.
Our waffles: Starting with a 16 hour preferment, our dough is made in small batches using the highest quality bread flour and a combination of eggs, milk, honey, vanilla, salt, yeast, soft butter and water. The dough is then mixed with Belgian pearl sugar before it is allowed to rise overnight. It is then baked in a special waffle iron to melt and caramelize the sugar in a way that gives these waffles their distinctive texture and flavor. These “Gaufres de Liège” originated in the Belgian city of Liège during the 18th century and differ significantly from the lighter batter-based Brussels waffle (“Gaufre de Bruxelles”).
Our mission is to bring you delicious treats from Belgium (where Marc grew up) while raising awareness for Tourette Syndrome, a tic disorder that occurs in approximately 0.5% of children and is characterized by motor (e.g., facial movements, shoulder jerking) and vocal tics (grunts, throat clearing) that occur repeatedly. A donation of 50 cents from each waffle sold is made to the local and national chapter of the Tourette Association of America.
